Katie's Spinach Quiche

Recipe was in the Standing Ovations Cookbook which featured this recipe from the former Apple Time Tearoom in Geneseo.  My mom, Linda Kutsunis has made this for years for holiday weekends.  It is also really delicious the next day!



2 packages (10 oz) of frozen chopped spinach
2 cups cheddar cheese
2 Tablespoons of Flour
1 cup milk

2 eggs, beaten
3 slices of bacon fried crisply
1/2 teaspoon salt
Dash pepper
1 9" unbaked pie shell


Defrost spinach and squeeze excess water out of it.  Toss cheddar cheese with flour.  Add spinach, milk, eggs, bacon and seasonings.  Mix Well.  Pour into pastry shell.  Bake at 350 degrees for 1 hour.   Garnish with additional bacon if desired.
